Crisp Summer Squash Slaw

Slaw

  • 1-2 patty pan squash, julienned
  • 1-2 zucchini, julienned
  • 1 head cabbage, julienned
  • 1 cucumber, julienned
  • 1 bunch scallions, chopped

Dressing

  • 2 tablespoons mustard
  • 2 tablespoons cider or rice wine vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons sugar or honey
  • 2 teaspoons sea salt
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 teaspoons celery seeds
  • black pepper to taste

Directions

Julienne all vegetables using your favorite method, or place all vegetables in a food processor and pulse until they are the desired size. Prepare the dressing in a large bowl. Toss with the veggies. Chill before serving.
